description Hydrogenated rice bran fatty acids are a derivative of rice bran oil, which is extracted from the outer layer of rice grains. These fatty acids find applications in the food industry as ingredients in margarine, shortenings, and confectionery products due to their solid consistency at room temperature and their ability to enhance the texture, mouthfeel, and shelf life of food products. They are used in the cosmetics and pharmaceutical industries for their emollient properties and as bases for ointments and creams. Despite the hydrogenation process altering the fatty acid composition, hydrogenated rice bran fatty acids still retain some of the nutritional benefits associated with rice bran oil, such as being rich in antioxidants and beneficial fatty acids. However, like other hydrogenated fats, they may contain trans fats, which have been linked to adverse health effects and thus should be consumed in moderation.
