description Fresh milk is used to make skimmed milk powder, sometimes known by its acronym SMP. It is made by evaporating and spray-drying milk to remove the water content, leaving behind a fine powder. Because practically all of the milk fat is removed during processing, the main feature of skimmed milk powder is that it has little to no fat. It can be used as a versatile ingredient in both consumer households and the food industry because it provides the nutritional benefits of milk without the extra fat.
